The craftsmanship of Zhangping Shuixian Tea is one of the representative techniques of Oolong tea production in China, practiced in Zhangping, Fujian province, and its surrounding areas.

Located in the southwestern part of Fujian, Zhangping lies in the subtropical mountainous agricultural zone. It's characterized by a mild climate, abundant sunlight and plentiful rainfall — creating ideal conditions for tea cultivation.

Building on the traditional tea-making techniques of northern and southern Fujian, the craftsmanship of Zhangping Shuixian Tea has further innovated.

First, the timing of tea picking is flexibly determined based on weather conditions, while the duration of sun-drying depends on sunlight intensity.

Decisions on shaking, frying and other steps are made according to the color changes of the tea leaves and the degree of fragrance release — embodying the philosophy of "harmony between nature and humanity" as the essence of Zhangping Shuixian Tea production.

Second, a rare compressed tea packaging technique is employed, making the tea convenient to use, store and transport.

More importantly, the natural gaps formed after compression not only effectively control the escape of aroma, but also facilitate better secondary fermentation of the tea — allowing for more comprehensive fermentation of beneficial bacteria.

Zhangping Shuixian Tea features a cane-like shape with a dark green and yellowish hue — presenting a "three-section" color. The tea liquor is clear and orange-yellow or golden in color, exuding a delicate, lingering floral fragrance.

The tea exhibits distinct characteristics when served hot or cold — the hot tea releases a rich, mellow aroma with a sweet aftertaste, while the cold tea offers a refreshing and uniquely pleasant flavor.

Today, Zhangping Shuixian Tea has become a pillar industry and a source of prosperity for the local economy, with its craftsmanship benefiting nearly 50,000 villagers.
